“Rigatoni al pesto genovese con pomodori secchi”- Our pasta alla Genovese recipe stays true to tradition in this classic Ligurian dish. Basil pesto gently coating al dente pasta topped with sundried tomatoes. Go green! Fresh basil, garlic, cashews, pine nuts, coarse sea salt, extra virgin olive oil and aged Italian cheese (Parmigiano-Reggiano and Pecorino Romano). More than just a pasta sauce, Pesto Genovese is recognized as a UNESCO cultural heritage, just like Neapolitan pizza.

wood fired pizza

At Barolo, choosing the traditional wood fired pizza method was the only option for us – for the taste, just as much as the authenticity! The wood fire method allows toppings to be cooked evenly and quickly, that helps keep flavour and nutrients locked in. It also give to the pizza a better crust and brings those small, charred spots on the pizza, who add complexity
to the flavor.
